Café de Olla
A warm, spiced Mexican coffee traditionally brewed low and slow.
Ingredients
• 4 cups water
• 1/2 cup piloncillo (or packed dark brown sugar)
• 1 cinnamon stick
• 2–3 whole cloves
• 1 star anise (optional)
• 1 small strip orange peel (optional)
• 4 tablespoons ground coffee (medium–dark roast)
Instructions
1. Heat the water gently and bring to a gentle simmer. Do not boil
2. Add piloncillo, cinnamon stick, cloves, and star anise. Keep at a soft simmer until the piloncillo dissolves.
3. Reduce heat to low. Stir in the coffee and let it steep for 3–5 minutes at a low simmer
4. Strain immediately to prevent bitterness.
5. Serve hot and enjoy!
